Ingredients:

200 grams paneer (cut into cubes)

1 small capsicum (cut into cubes)

1 small onion (cut into cubes)

1 small tomato (cut into cubes)

2-3 whole dried Kashmiri red chilies

1 teaspoon cumin seeds + 1/2 teaspoon cumin seeds

1 teaspoon fennel seeds

1 teaspoon coriander seeds

4-5 black peppercorns

1/2 tbsp kasuri methi

1/4 cup finely chopped onion

2 green chilies, finely chopped

1 tablespoon ginger-garlic paste

1 large tomato (freshly pureed)

1/2 teaspoon turmeric powder

1 teaspoon Kashmiri red chili powder

1 teaspoon coriander powder

1/4 teaspoon garam masala

Salt to taste

2-3 tablespoons fresh cream

Water as needed

Chopped coriander leaves

2-3 tbsp oil


 Restaurant Style Kadhai Paneer


Instructions:

First, dry-roast coriander, cumin, fennel, black pepper, and whole dried Kashmiri red chilies in a pan. Grind them coarsely.

Add a little oil to the same pan and fry the paneer cubes until they turn slightly golden brown. Transfer them to a plate and set them aside.

Lightly fry the diced bell peppers, onions, and tomatoes in the same pan. Or set them aside with the paneer cubes.

Heat the oil in the pan. Add the cumin seeds and let them crackle.

Follow this by adding the finely chopped onions and sautéing until they become slightly translucent.

Once they are well roasted, add the ginger-garlic paste and chopped green chilies and sauté.

Add the tomato puree and mix well, or cook for 1 minute. Add the coarsely ground spices and mix well.

After this, add kasuri methi, turmeric powder, red chili powder, coriander powder, and salt to taste and mix well. After this, add a little water and mix it.

Cover and let it cook on low flame for 2 minutes.

Now add paneer cubes or fried capsicum, onion, and tomato. Also add fresh cream and mix it.

Garnish with green coriander. Finally, the Kadhai Paneer is ready to serve for the wedding. Serve it with naan or roti paratha.
